Pineapple cake with white chocolate sauce

One thing I truly dislike is waste. Not only because of financial or moral considerations, but I really don't fell good when I end up throwing food. That's why I apply simple principles in everyday living: don't buy more than we need and consume in a short to medium timeframe; don't overfill the plate; reuse leftovers. 

During weekends, I have a habit: I cut fresh fruits, arrange a big platter and leave it in the kitchen with some little spoons, forks or picks. Every time my kids walk in the kitchen, they grab a bite and by evening, the fruits are almost gone. This Friday I did the same but on Saturday morning I had exactly 248 gr. of leftover pineapple. Remembering my "no waste" principle, I started searching the fridge for ingredients to make a pineapple cake. The result? An incredible, well balanced, sweet and sour, tropical and elegant dessert! This cake was the perfect meal closer for our Saturday lunch and it was the first time I've heard my son, Dominic "Mom, this is incredible good!" .Don't tell me I didn't make you curious! Ingredients for 8:

For the cake:

  • 240 gr. white flour 
  • 200 gr. sugar
  • 3 large eggs
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1 tsp. vanilla
  • 1/2 tsp. salt
  • 250 gr. finely chopped fresh pineapple, with its juice (could also use canned pineapple)
  • 10 gr. butter and 20 gr. flour for pan

For the sauce:

  • 100 gr. white chocolate

Method:

  1. Preheat oven at 190'C.
  2. In a large bowl, put the eggs (whites+yolks) and add 1/3 of the sugar. Mix for 5 minutes with a hand mixer. Add the second third of the sugar and mix for 5 more minutes. Add the last third of sugar and mix for another 10 minutes. You should have an airy and fluffy cream.
  3. Over the egg and sugar mixture add the chopped pineapple and vanilla and fold in gently with a spatula.
  4. In another bowl, combine the flour, salt, baking powder and baking soda. 
  5. Add the flour mix over the egg and pineapple. Fold gently.
  6. Take a medium size baking pan (8 inches/20x5cm) and butter it well, add the flour and cover the entire pan surface.
  7. Add the batter to the pan, pop in the oven for 40-45 min. (don't open oven for at least 30 min. or it won't rise), check with a toothpick to come out clean and take out of oven. Leave to cool on wire rack.
  8. While the cake is cooling, heat a pan with water on the stove. Put the white chocolate in a glass bowl and place on top of boiling water (medium heat). Make sure the bottom of glass bowl doesn't touch the boiling water. This is called bain marie. 
  9. Melt the chocolate and stir slowly with a spatula. Drizzle the chocolate sauce on top of the cake with a spoon.
