Matcha Cheesecake
I am not the kind of mom that spoils her kids all day long. On the contrary, I believe that teaching them to be modest, using wisely the resources at hand and eliminating waste are just a few ways of building healthy behaviour. But kids also need constant proves of love in order to develop self trust and independence. So, besides a lot of hugs, kisses and "I love you"-s, sometimes I spoil them with zelidecious treats. Follow my lead and prepare my zelidecious Matcha Cheesecake. Could be a great breakfast or brunch but works just fine as a tasty dessert. There's no wrong timing for this one!
Ingredients for 8-10 servings:
- 400 gr. light cream cheese
- 200 gr. double cream
- 200 ml. milk
- 50 gr. flour
- 100 gr. raw sugar
- 4 large eggs
- 1/2 tsp vanilla powder
- 2 tsp. matcha powder
- soft butter for greasing
- berries, powder sugar and maple syrup for serving
Method:
- Preheat oven at 180'C.
- In a large bowl, mix together the cream cheese, double cream, milk, flour, sugar, eggs, vanilla and matcha powder.
- Grease with butter a 23cm round baking tin and pour the cake batter.
- Bake for 45-50 min (until you have a nice light brown colour).
- Take out of the oven, leave to cool completely in the cake tin.
- Remove from cake tin, top with berries and dust some powder sugar.
- When serving drizzle a little maple syrup.
