Avocado and parmesan sourdough toasts

Almost everyone loves avocado. It's a wonderful ingredient in salads, makes a delicious guacamole and takes toasts to a whole new level! But if you combine a crusty sourdough toast with thinly sliced ripen avocado, splashes of lemon juice, freshly grated parmesan cheese and some crunchy roast pumpkin seeds, you will enjoy one of the most zelidecious breakfasts in the world!

Ingredients for 2:

  • 2 slices of fresh sourdough bread (if stale, just toast for a couple of minutes)
  • 1 ripen avocado
  • juice from 1/2 lemon
  • 20 gr. grated parmesan 
  • 2 tbsp. raw pumpkin seeds
  • salt and pepper to taste

Method:

  1. Thinly slice the avocado.
  2. If the sourdough is fresh, cut 2 slices and prepare to top with the ingredients. If the bread is stale, toast it for a few minutes and leave to cool for another 5.
  3. Put the raw pumpkin seeds in a nonstick pan over high heat and roast for 2-3 min., moving the seeds around avery 10-15 sec. so they won't burn. 
  4. On a chopping board, put the bread slices. Arrange on top the avocado slices. Drizzle some lemon juice, sprinkle with salt and pepper. Grate the parmesan cheese and garnish with the roast pumpkin seeds.
  5. Enjoy!
