Lemon Curd
If you usually buy ready made lemon curd from the supermarket because you might think it's hard to make at home, try my recipe and I can bet you will not go back to the shelf one. It goes great with Pavlova (try my Pavlova with Lemon Curd, link here https://zelidecious.com/recepies/pavlova-lemon-curd ), cookies, scones, pancakes, waffles, crepes, biscuits, banana breads, topping for cakes, simple with some fresh fruits or whatever comes through your head. Easy to make, easy to store (in a jar, in the fridge, for around 1 week), easy to enjoy!
Ingredients for 8-10 servings:
- 6 egg yolks
- 200 gr. granulated sugar
- zest from 2 lemons
- juice from 2 lemon (100ml)
- pinch of salt
- 100 gr. room temperature butter
Method:
- Fill a pot with 1/3 of water and put to boil over medium heat.
- In a large heat proof bowl, place the egg yolks, granulated sugar, lemon zest, lemon juice and pinch of salt. Place bowl on top of boiling water (make sure the bottom of the bowl is not touching the hot water) and mix gently all the time with a whisk. Very important to keep your eyes on the lemon curd and stir continuously or the eggs will curdle. Whisk until you have a thick cream, around 10 min.
- Remove curd from the heat and leave a couple of minutes to rest.
- Cut the butter into 5 pieces and add it to the lemon curd by whisking, one piece at a time.
- Put the lemon curd in a jar, leave to cool, close and refrigerate until ready to use.
