Langues de Chat

Langues de Chat biscuits are addictive. If yoy try one, you can't stop eating them. And they go perfectly with a mug of hot tea or coffee, as an afternoon snack with some fresh yoghurt or as a treat for the little ones at school. These finger size biscuits are crunchy and simple, not too sweet, great for a couple of days...if they last that long. Enjoy, they are done in a blink of an eye!

Ingredients for 4 servings (around 100 biscuits):

  • 125 gr. soft butter
  • 125 gr. powder sugar
  • 4 egg whites
  • 175 gr. flour
  • 1/4 tsp. vanilla powder/extract

Method:

  1. Take the butter out of the fridge 1h before making the biscuits. Leave it to reach room temperature and soften (this step is very important for an easy mix and handling).
  2. Heat oven at 180'C.
  3. Place the soft butter, powder sugar and vanilla in a bowl. Whisk well until you have the consistency of a cream.
  4. Beat with a hand mixer the egg whites until soft peaks.
  5. Incorporate the egg whites foam in the butter and sugar mix, 1/3 at a time. 
  6. Add the flour and whisk well.
  7. Line a baking tray with parchment paper.
  8. Transfer the biscuits mix in a pipping bag equipment with a round medium size nozzle.
  9. Pipe the mix in the baking tray into strips (thumb size), leaving space between them as they will spread while cooking.
  10. Transfer into the oven and cook for 10 min.
  11. Take out of the oven, leave to cool for 5 min in the baking tray, then transfer on a serving platter. Continue the baking process with the rest of the batter.
