Chocolate Soufflé
If you are a chocolate lover, you probably won't find a bigger joy than diving with your spoon into a hot, melting, velvety, indulgent, aerated, decadend Chocolate Soufflé. But things get even better, my Zelidecious Chocolate Soufflé is gluten-free without having the tiniest difference in flavour than the gluten version. Don't run away because you might think it's hard to prepare, it is simple and fast. Try it as soon as possible and let me know your experience! Enjoy, it's Zelidecious!
Ingredients for 2 soufflés:
- 100 gr. gluten-free black chocolate (70% cocoa)
- 50 gr. butter + 1 tsp. extra for greasing the ramekins
- 1 large egg
- 1 egg yolk
- 10 gr. almond flour (ground almonds)
- 60 gr. powder sugar
- 5 gr. gluten-free cocoa powder + 1 tsp. extra for dusting the ramekins
Method:
- Heat oven at 180'C.
- Bring a pot with water to a gentle simmer on your stove.
- In a large glass bowl, put the chocolate and the butter and place over the simmering pot of water (make sure the glass bowl doesn't touch the water and is slowly melting thanks to the steam).
- In a medium bowl, add the entire egg, egg yolk and sugar and beat with a hand mixer until you have a fluffy and pale cream, about 5 min.
- After the chocolate and butter melted and you combined them togeter, pour the chocolate mix over the egg and sugar cream. Fold in genlty with a whisk.
- Add the almond flour and the cocoa powder to the chocolate mixture and incorporate everything well but slowly.
- Take 2 small ramekins (or other circular, oven safe, small baking dishes) and butter them well until up. Dust with cocoa powder and make sure the entire ramekin is covered.
- Pour in each ramekin half of the chocolate batter and place in the oven (on a baking tray to be easy to take out) for exactly 14 min. If you wish to have that liquid interior, do not overcook because you will end up with a simple chocolate sponge. After you put the souffle in the oven, do not open door until the baking time finished.
- Leave to cool for 1 min. and serve immediately with some fresh fruits, vanilla ice cream or just simple as this dessert is a masterpiece!
