Banana Bread with Pecan Nuts and White Chocolate

I make Banana Bread very often but almost all the time is nut free due to school restrictions. Considering that these days the kids are learning at home, I thought of baking for their snacks a soft, yummie banana bread with plenty of pecans and white chocolate chips. If you might not have pecans in the house, walnuts are a perfect substitute. Same with the white chocolate, if you might have dark or milk chocolate, it's perfect. Let's start baking!

Ingredients for 1 Banana Bread (around 12 servings):

  • 250 gr. flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp vanilla seeds or extract
  • 3 medium eggs
  • 100 gr. sugar
  • 100 ml. vegetable oil (I use sunflower for its neutral flavor)
  • 400 gr. mashed bananas (3 large bananas or 4 medium)
  • 100 gr. chopped pecan nuts/walnuts (or a mix of them)
  • 100 gr. chopped white chocolate 
  • 10 gr. room temperature butter for greasing

Method:

  1. Preheat oven at 160'C.
  2. In a large bowl, combine the flour, salt, baking soda and baking powder. 
  3. Put the eggs with the sugar, oil and vanilla extract in another bowl and whisk well.
  4. Mash the bananas with a fork. 
  5. Transfer the mashed bananas over the egg mix and stir. Add the flour mix and incorporate well.
  6. Next, add the chopped pecans and the white chocolate. Mix everything together.
  7. Take a loaf pan and grease it well with the butter. Pour the Banana Bread mixture in the pan and pop in the oven for around 1 hour and 15 min. 
  8. After 1h and 15 min, check with a matchstick or a skewer if the bread is ready (should come out clean). If not, leave for 5 more min.
  9. Take the Banana Bread out of the oven and leave to cool for 15-20 min in the loaf pan. After this time you can take out the bread, leave to cool completely and enjoy!
